vegetable curry

INGREDIENTS

~d1sg+e'M.J)T7S7_ 1 medium red pepper, deseeded and sliced
X M v K^;n8@ ½ vegetable stock cube
Ukh,Oa{ 1 tbsp curry powder
0F\~Vk pa.a ½ tsp salt
n!DKs%Q-@ 80g cauliflower B&c.~Z1i].}+e&?
120g mixed frozen vegetables, defrostedrvs~8e [F7M(H
15g raisins%I6PtF `T~'D J
1 tsp chutney~J9_ w6^Y+{$F
50g couscous, dryHSW5Ur'CnE%h

6|%\4~2w0O'j2ZA2La 1. Cook the couscous as per the packet instructions, with water only, no other ingredients, keep warm.

2. Break the cauliflower into florets the size of a small marble, defrost the mixed veg if necessary.NgUezr5Bo&[

3. Make up the stock cube with 100ml water.

T,` hE8Q 4. Heat the oil in a heavy based saucepan and cook the pepper for 5 minutes approx.ma$sa'dv6g3O

.Y%f-Y9@{ 5. Stir in the stock, curry powder, salt and vegetables and boil for 5 minutes, adding boiling water from a kettle if necessary.

6. Stir in the raisins and chutney, serve with the couscous.
