vegetable curry

INGREDIENTS

9x x%?n pl 1 medium red pepper, deseeded and sliced

1 tbsp curry powderaKW(ri+RVt
½ tsp salt6~o*`7\9q9A
80g cauliflower
? s xG1o 120g mixed frozen vegetables, defrosted
v5L@| O m'd2O 15g raisins
C j[ Xj 1 tsp chutney2m(x!G;t3s B9cC:{
50g couscous, dryo@:NGJ0vv~p

,E w5~^p+_@:Kv 1. Cook the couscous as per the packet instructions, with water only, no other ingredients, keep warm.

[*WoPQ ^@ 2. Break the cauliflower into florets the size of a small marble, defrost the mixed veg if necessary.

4. Heat the oil in a heavy based saucepan and cook the pepper for 5 minutes approx.

phUQ Oqy9g^"C,O 5. Stir in the stock, curry powder, salt and vegetables and boil for 5 minutes, adding boiling water from a kettle if necessary.
