做 法 : (1) 先預熱焗爐至 180 度及掃油在焗板上。

(2) 將麵粉篩在碟上及打勻雞蛋。

(3) 將水、油及鹽放在煲內,加熱煮至大滾,然後迅速地將麵粉倒在

滾水內,不停攪拌及離火,再用木匙極速地把煲內粉糰攪至軟身。

(4) 待凍一會後,徐徐地把蛋液拌入,每次均要不停攪拌。fw6X)z#X
(5) 將混合物放入唧袋,在焗板上唧出約 2-3 吋的條狀,每條大小

(6) 放入已預熱焗爐內焗約 15-20 分鐘。

(8) 將已焗好的泡芙的中央切開,待凍。

Method : (1) Preheat oven at 180 oC, grease baking tray.

(2) Sieve some flour on plate, beat egg.Q$[(iYX.})b?
(3) Add oil & salt to water, bring to boil. Quickly pour flour into boiling water,

stir constantly, and then remove from fire. With a wooden spoon, swiftly mixi;{v#m5_}'a#P
the flour till soft.

(4) When flour is cooled down, slowly ad egg mixture & keep stirring.

(5) Put mixture in a piping bag, make 2-3 inches long strips on baking tray, each

(6) Bake for 15-20 mins.

(7) Beat cream till stiff, set aside. Place coarsely chopped chocolate in the top of9m#])J(yX/}X1|V
a double boiler over hot, not simmering, water. Melt the chocolate, stirring

(8) Cut open baked chocolate puff, cool down slowly.
