五、用手壓住魚段，另一手拿刀貼住魚脊骨上沿推近,感覺着魚骨的位置,及時調整行刀的方向

七、把片下來的魚橫放，沿着魚尾至魚頭的方向用刀逐一片下，每片厚度大約5-7毫米左右

八、取一個雞蛋，左右手倒一倒，倥出蛋清備用

九、魚骨切成段，和魚片魚頭一起放入盆中，加鹽及料酒攪拌，再放入蛋清抓拌均勻，靜置20分鐘~
