chocolate bread and butter pudding
Makes 4
Ingredients
Butter, for greasing
450ml whole milk
150g dark 70% cocoa chocolate
3 eggs
1 tsp golden caster sugar
1 tsp vanilla essence
6 pain au chocolat
50g golden sultanas, soaked in 1 tbsp amaretto
2 tbsp light muscovado sugar
To finish
Extra light muscovado sugar (optional)
Method
Preheat the oven to 180°C/fan 160°C/gas mark 4 and grease 4 individual ovenproof dishes.
In a saucepan heat the milk and chocolate gently until melted, but do not boil.
In a large bowl whisk the eggs, caster sugar and vanilla together. Gradually add the warm chocolate milk to the eggs, whisking all the time.
Cut each pain au chocolat into quarters and place one layer in a dish. Cover with half the sultanas and sugar.
Pour the chocolate custard into a jug and slowly fill the dishes to ensure the custard mixture soaks through all the layers.
Cut the leftover pain au chocolat into smaller pieces and then push them on top of the custard layer in the dish. To finish, sprinkle over the remaining sultanas, sugar and soaking juices and top with the remaining custard.
Leave for 5 minutes to allow the pain au chocolat to soak, then sprinkle with the light muscovado sugar and pop into the preheated oven for 25 minutes until risen and golden.
For an extra touch, sprinkle the top with some more light muscovado sugar and caramelise with a blow torch.
